I had a sudden craving for warm damper with butter and honey this afternoon so I googled to find the easiest recipe and interestingly found that someone had used Cola (or Coke, depending what you have in the cupboard).
For those of you who are not keen on eating damper made with Cola, this recipe works well:
What you need:
- 3 cups of self raising flour
- 3/4 cups milk
(If you are game, replace the milk with 1 cup of Cola)
What you do:
- Mix the flour and milk together to form a dough.
- Shape it into a circular mound and place on a greased and floured baking sheet.
- Bake in a moderate oven for about 15-20 minutes. A sure way of knowing it’s ready is to knock on the top of the damper and if it sounds hollow, it’s done.
Mmmmm…craving satisfied!
